It really is time I sort out my diet again! It's just slipped too much lately. As of right now I am back on it! I was going to wait until next week as I am away this weekend and have a wee meal out planned for Monday, but I can't keep using weekends away and going out for dinner as excuses to eat crap. I managed just fine for months last year - I think I managed to keep eating well from February right through to September, I had little blips, nights out and weekends away but I managed to continue eating healthy around the blips. I know I can do it and most importantly I really, really want to. I do feel pretty crappy and run down right now - I have a spot the size of my fist on my chin! It's the first proper spot I've had in  really long time! I feel like my hormones are a bit messed up and I'm tired all the time. I'm actually beginning to really dislike unhealthy foods - I'm so fed up of them! And I don't care if I never eat another crisp again (though this may change in a day or two!)

I've got loads of lovely, healthy foods to eat, I've got my kabocha squash to try, I've still not tried mesquite, I've got some lovely homemade dark chocolate and peanut butter, I have some Willies Cacao to try out, I've found somewhere I think I can buy Artisana Coconut butter from - fingers crossed I can order on pay day!

I wont be posting a lot over the next few days since I'm away, but I am going to make an effort to eat better and when I have the time I'm going to try get into the habit of posting every day or two with my food, and hopefully something else less boring! I'm going to start planning my meals better and trying out new recipes again as I found that really encouraged me to keep it up before.

Another quiet weekend

For the blog, not for me! I'm heading to the airport (again) to fly to Belfast and see my wonderful friend Jill. We've got a great weekend planned, street dance show, a market which involves cup cakes! Some food, done drinks, the sights of Belfast and lots and lots of wandering around being big nerds with our cameras! Jill also mentioned teaching me to drive, but she was half a bottle of wine gone when we were in Birmingham a couple of weeks ago when she suggested it...
Oh and of course the highlight of the weekend - Lady Gaga on Monday night!! I can't WAIT! I know it's going to be amazing! I saw her last summer at T in the Park and have been desperate to see her on tour since.

Whoohoo! I managed to get my hands on a couple of little kabocha squashes! Sadly I found them whilst down in Glasgow for a gig (3 hours drive from home), but I will be putting in an order forore everytime friends or family come to visit! Can't wait to get home and try it!

I keep meaning to make pancakes but never get round to it, tonight I had no excuse! I didn't bother with "healthy" pancakes, just went straight in for a proper Scotch Pancake! (or 12!) I don't actually know how 'proper' my recipe was, but I used:

120g self-raising flour
small pinch salt
30g caster sugar
1 egg
1/4 pint milk

I mixed the egg and milk then mixed in with the flour, sugar and salt until smooth.

Heated a large non-stick frying pan with a little groundnut oil

Dropped in a desert spoon of batter

Once bubbles appeared on the surface I flipped them

Cook on the other side for a minute or so - just check to see when it's ready

Pile up on a plate and smother with butter/maple syrup! Yum!

Maca and Hot Chip!

Whoohoo! I got me some maca! It's awesome! Love love love it!

My boyfriend took me to Edinburgh at the weekend - he got me tickets to see Hot Chip for Christmas and tickets for the zoo for my birthday. As if that wasn't exciting enough, I found a bit health food shop! Sadly I'm a little on the poor side this month (with being away every weekend!) so I couldn't indulge too much, but I did get some snack bars, dark chocolate spread, maca and mesquite. I'm now going to be constantly thinking of excuses as to why we need to drive 2.5hrs to Edinburgh every other week so I can go back for more. They have two stores and from the huge range they have on their site I'm guessing we ended up in the smaller store - good reason to go back and check out the other one I think ;)

Anyway, back to the maca! I have only tried it with cinnamon on almond butter on and apple and on a banana, the apple was yesterday and I didn't have my phone at work so no picture of that, but I did snap the banana - after scoffing part of it! Much better on the crisp apple but still delicious on the banana. It smells amazing too. The Fitnessista said it tasted matly and I definitely agree, little bit like Horlicks. Planning on adding this to smoothies and oats, and loads of other things!

If you are looking for something new - make it maca!

Hot Chip were fantastic, another one of my top gigs! They played a great show and I'm not very good at reviewing music so I'll just leave you with - awesome! and those boys have got some moves! Apparently they are "electro-pop". Go check them out - Hot Chip and have a look at their videos too

Feeling Nutty?

I was in a bit of a nut butter mood today and was quite liking the idea of something flavoured after seeing several on the American blogs. I can't seem to get any here, so I thought I should have a go at making my own!

I did a bit of Googling and everything seemed to basically say, get some nuts, put in a food processor, be patient.

I'd bought a big bag of almonds at the weekend so put 200g into my food processor

Blended for a few minutes

And blended some more! I almost gave up after a while as nothing much happened for what seemed like ages!

Blended even more....

It stayed this way for quite some time so I went back to Google to make sure that I really just had to keep blending, apparently so.

Then, all of a sudden

Almond butter! I added some sea salt and gave it once last whirl

Yay! It is really, really easy! You don't have to do a lot, just need to keep going!

I then took a couple of spoonfuls and added some cacao and a little agave nectar

Yum! This is going in my porridge tomorrow morning, I can't wait!

After the success with the almonds I was really in the mood for making more! I've had a tub of maple spiced pecans I made at christmas time which has sat un-touched since the end of December. They were still fine and I was rather liking the thought of a maple spice pecan butter! The nuts were just mixed with maple syrup and cayenne pepper and warmed in a pot for 5 minutes or so.

Into the food processor they went and a few minutes later...

Spiced maple pecan butter! SO good! Much quicker to make thanks to the maple syrup. Obviously this is the less healthy option, but definitely worth it! (does look a little gross though!)

Leaving on a jet plane

I'm off to Birmingham for the weekend so unlikely to post over the weekend. Meeting up with a bunch of great frieds for dinner and drinks - I'll try and behave (ish)!
can't post links right now but the wonderful Jildo and JAG will be coming too. I'm meeting Jill in Birmingham airport in a couple of hours and I cannot wait!!
didn't have time for a proper breakfast so I've had a pack of blackberries, a latte at home and I'm now sipping a Costa Coffee flat white to keep hunger at bay. I have some raw fruit and nit bars in my bag for healthy snacks over the weeked, hopefully they won't be the only healthy thing I consume this weekend!

Healthy Wish List!

Normally I have a wish list in my head of things I really want - usually clothes, DVD's, CD's... right now it's all healthy foods and things! I've actually been after most of it for a while but it's so hard to get hold of in the UK! I've managed to find a site that has quite a few of them though - so this next pay day I am going to indulge!

Some Food!

Another busy week so here is a brief summary of what I've been eating in pictures!

Another Chocolate Cinnamon Smoothie in a bowl, plus overflow!

My microwave omelette and what goes in it - I'm hooked on these, so handy for work!

Pitta Pizza's! Chicken, bacon, red onion and a little cheese. Sauce is just tomato puree with some basil and water. Really tasty! I'd love to make a few of these up and freeze them for the nights I just can't be bothered!

My new favourite mug - Christmas present from my mum!

And inside some coffee with fresh ground beans in my shiny new food processor!

Salmon and asparagus risotto - my boyfriends request for his birthday dinner. I was rather pleased with myself, it tasted amazing!! I'll makie it again soon and post a recipe.

Served with some chipped (I love you food processor!) butternut squash and sweet potato - baked in the oven with olive oil, salt, pepper and cumin.

And his pink sparkly birthday cake (another food processor creation!)

Soup! Spiced north African vegetable slow cooker soup to be precise - this is a great winter soup! Will post the recipe sometime. Made a huge batch of it to freeze in portions, comes in very handy when I don't have anything prepared to take to work for lunch.

And the last of my haloumi with Nando's sauce and button mushrooms in a toasted pitta - tasted better than it looks!

Phew! There are more but I need a break!
