I keep meaning to make pancakes but never get round to it, tonight I had no excuse! I didn't bother with "healthy" pancakes, just went straight in for a proper Scotch Pancake! (or 12!) I don't actually know how 'proper' my recipe was, but I used:

120g self-raising flour
small pinch salt
30g caster sugar
1 egg
1/4 pint milk

I mixed the egg and milk then mixed in with the flour, sugar and salt until smooth.

Heated a large non-stick frying pan with a little groundnut oil

Dropped in a desert spoon of batter

Once bubbles appeared on the surface I flipped them

Cook on the other side for a minute or so - just check to see when it's ready

Pile up on a plate and smother with butter/maple syrup! Yum!

I will be having more for breakfast!

  1. Wow, your pancakes are so NEAT! Everytime I make pancakes, they look such a mess, and they're never circular...I'm blatantly not blessed in the pancake making department :s

    I was quite impressed myself actually! I think the trick is a thick batter... I have no clue, it's like the first time I've made them since I was in school!
