It's a hard life...

... being a cat! This is what's currently under my chair

And I probably should post this one, but how classy?

I can't think of a post title today.

Quick food update - this week feels much easier than last week, hope it stays this way!

Monday-

Breakfast: Porridge with hazelnut & almond rice milk, dried dark cherries and lots of cinnamon - first time I've had this combination and absolutely loved it! Shame I used the last of the dark cherries and will have to wait until the next food shop for more!

Snack: Fresh(ish) strawberries

Lunch: 2 whole egg omelette with some skimmed milk and red leicester cheese - I did have a salad with me but didn't manage to eat it with lunch

Snack: Incredibly juicy pink lady apple - these are by far my favourite apples!

Dinner: Salad - spring onion, spinach and mixed leaves with chocolate orange balsamic vinegar and tomato salsa, followed by stir fried veg with purple sprouting broccoli, cooked with coconut oil and I used 1tbsp soy sauce and 1tsp fish sauce and garlic salt for some flavours! I've never had purple sprouting broccoli before so was quite excited to try it... didn't think it tasted all that different to be honest!



Snack: Cocoa Orange Nakd bar and a banana Maxitone Sculptress shake - love this! Tasted like those foam banana sweeties.





I also had a Vita Coco coconut water in there somewhere - very nice! I had the coconut and pineapple one and all I could think was how great a shot of rum would be in there :D

Drinks: Coffee with skimmed milk and coconut syrup and water oh and I had a little raspberry and pineapple smoothie which I made for breakfast to have this morning but there was too much to fit in my insulated cup thing.

Exercise: None - I'm off running until I get paid and can buy some proper running shoes as my knees are really sore! Hopefully I'll get some on Thursday after work and I can run on Friday morning.

Tuesday-

Breakfast: Starbucks grande skinny latte with an extra espresso shot and sugar free hazelnut syrup with cinnamon sprinkled on top - I needed something to get me going!

Snack: Half my breakfast smoothie - tinned pinapple (in natural juice) blended with frozen raspberries

Lunch: Smoked Haddock...something... it was the New Covent Garden Soup of the Month anyway! And it was very nice, bit mild tasting for my liking though!

Snack: The rest of my breakfast smoothie and a dried fruit and oat bar and when I got home I sat down and put my feet up (for 10 mins) with an amaretto flavoured coffee





Dinner: Portobello mushroom and grilled halloumi with Nando's sauce in a wholemeal pitta



Love this meal so much!

Snack: I was going to have some strawberries



They looked and smelled fantastic, but when I went to eat them I noticed the bottom two had gone mouldy :( so I had to throw them away, can't eat something when something mouldy has been touching it! So insted I had one of my boyfriends Cadbury Mini Eggs chocolate nest cake things.

And now I have a Maxitone Sculptress shake - half banana, half chocolate - tastes good.

Pack Tunch Winners

Is this really sad?

I got new kitchen scales and it was the highlight of my weekend, they make me so happy!

I went from this giant and inaccurate monstrosity

Aren't they cute!? Bad news is it looks like my old scales were rather generous! I measured out my usual amount of porridge oats and it was such a teeny tiny portion! Oh well, hopefully I'll see some better weight loss results now I'm recording things more accurately!

On the subject of new things, look what the wonderful Caroline sent me!



She wasn't getting on too well with the Maxitone Sculptress shakes but still had two unopened tubs and after she saw that I was using them she asked if I wanted them :) Thank you Caroline!

I'm thinking the packs of Granola will make excellent cinema snacks since it's a big filled with tasty nibbles. Also, did you know... there are more chickens than people in the world! Is anyone else a little freaked out by that?

I don't have a very interesting food update for you, I spent a lot of the weekend eating porridge as I was trying to get a good photo for my blog background (yes I'm messing about with my blog again!)

I stopped by Holland & Barratt on Saturday and picked up some cartons of almond & hazelnut Rice Dream, perfect for a Peppermint Latte! (in a blurry mug)



Today's packed lunch - I decided to start making a proper effort with food to take to work again - I've planned out the next couple of weeks already!



More on that later, I'm off to watch the final episode of Undercover Princesses in BBC iPlayer - I love this, I just noticed it was on yesterday, sadly there are only 4 episodes in the series :( It's nowhere near as funny as Undercover Princes was, but the girls seem to have had a bit more luck than the boys did, I just really hope Cinderella's family can accept Paul!

Again?

Well I think I'll be starting over again, again! Why is so hard to stick with it more than a few days? It's pretty annoying now, I want to be eating healthy, I don't want to eat junk, I don't want to be all squidgy, but I can't stay away from crappy foods!

Food has just been OK this week, I've been doing well some of the time and then ending up going over calories. Tuesday  it was down to a 3 hour meeting over lunchtime where they provided sandwiches, fruit and cheeses. I stayed away from the cheese and had the equivelant to a 2 slices of bread sized sandwich (chicken mayo, egg mayo, tikka chicken and salad and cheese and pickle quarters) and then I had a plateful of fruit (watermelon, plum, pineapple and grapes). Because I knew lunch would be a bit awkward I had planned to just have fruit for breakfast but ended up just having a small latte. After Lunch I had a Starbucks skinny latte with sugar free syrup. Dinner I had a sandwich - I'm a bread addict! Hummus and chicken breast with fajita seasoning, with butter. It then got worse as I went to the cinema and had a tube of smarties, pack of Snack a Jacks and box of fruit. Thanks to the empty calories I was hungry when I got home so had a bowl of Maple Pecan Spice cereal with chocolate oat milk. Also going to the cinema meant I skipped the spin class!

Wednesday...almost a good day! I started out with oats with vanilla rice milk and spiced maple pecan nut butter, banana and satsuma before a 20 min run at lunchtime, followed by a Maxitone Sculptress shake and tuna salad. I had 2 coconut fudge babies when I got home whilst making dinner - which was chicken chow mein and was absolutely beautifuk! I love this dish - so simple and only 400 calories! But, I was hungry later on and got tempted by more Maple Pecan Spice cereal with chocolate oat milk (amazing combination of flavours!) and a large glass of  sparkling elderflower presse.

Thursday, I was in a bit of a rush so grabbed a raw organic food bar (cinnamon and raisin) for breakfast along with a milky coffee. Satsuma mid-morning and lunch was another work freebie, I went for the healthier option of (4!) prawns (in a mayonaise-y sauce which I didn't like), and salmon fillet with champagne and chive sauce (creamy) a couple of chips, few forkfuls of mustard mash and some cabbage, peppers and mushrooms. Annoyingly I didn't want chips at all but she piled someone my plate before I could stop her and once they were in front of me I couldn't resist!

This is where it all goes horribly wrong! We went to the cinema (something about gonig to the cinema really mucks me up) I had a 2 finger Drifter bar which I'd been craving all day, salt & vinegar Kettle chips and a two pack of little (hoesnlty they weren't *that* big!) caramel filled chocolate bunnies.

I then went went home and had dinner! We got a hot roast chicken from the supermarket, they were reduced and had clearly been cooking for far too long and there wasn't much moisture left in it, but of the good stuff that was left I probably got the equivelant to a large chicken breast (skin on!) and I had it with what felt like half a loaf of bread!

Was damn tasty though!

In my defence, if we hadn't gone to the cinema I would have not had chocolate and crisps and dinner would have been chicken jambalaya, probably followed by more of that cereal! Nowhere near as bad.

I definitely need to stop snacking in the cinema. We have unlimited passes so go fairly often, would like to make snacking at the movies a treat rather than an everyday thing since we are there so much, maybe I can let myself have a once monthly treat and see how that goes, and for other visits I'll take fruit - for now anyway while I wean myself off!

Today I have had a box of blackberries and a coconut fudge baby for breakfast and French onion soup with a wholewheat seeded roll and a few croutons for lunch. I'll have an apple and a satsuma this afternoon, then chicken jambalaya for dinner. This will take me to 1118 calories for the day. I'm heading out this evening so will be adding a couple of drinks to that, literally a couple as neither of us have much cash left!

Fingers crossed for a good weekend! :D

Starting Over...?

Whoops, that wasn't a very healthy weekend! I mean it could have been worse... My dad and my sister came to visit so I pretty much just relaxed! I'm not even sure I can remember what I ate!

Saturday breakfast was an organic food bar



I love these bars, they are like a stodgier, chewier version of a Nakd bar and very tasty! This one had the added bonus of chocolate chips!



Lunch... um, I think I shared a plain ham sandwich with my sister! Dinner was good, we had a fajita feast! With all the trimmings! Plus lots of chips and dips and hummus, my favourite! I may have also had a few glasses of bucks fizz and a large toffee apple cider - this was amazing! It was on offer for £1, it would have been rude of me not to try it!

Sunday started with pancakes filled with dark chocolate spread and coconut butter, the warmth from the pancakes made the topping all melty and heavenly! This resulted in some late night snacking on three slices of toast with the same toppings - if I only I could find some sort of warm, calorie free vessel for the chocolate and coconut...

There was some lunch, chocolate and more chips n' dips in there somewhere. I had no dinner due to filling up on crap. Bad Stella.

So, starting over again this morning!

Breakfast: Green monster smoothie with spinach, spirulina, banana, vanilla rice milk and maca powder - delicious!

Snack: Satsuma and a banana

Lunch: Prawns in Nando's marinade with salad (iceberg, mixed leaves, spinach and spring onion) and a raw spich tomato/flax cracker

Snack: Maxitone Sculptress chocolate shake after running, and when I got home a Coconut Fudge Baby and some raw chocolate - very kindly sent to me by The Raw Chocolate Company, I had tried one of their bars before and thought it tasted lovely, the texture was great, but it left the most fowl aftertaste in my mouth that I just could not shake! Last week I tried some mesquite for the first time and noticed the same horrible aftertaste, after some googling I discovered that the raw chocolate bar I had tried contained an ingredient called Algaroba, which is basically the same as mesquite! So I emailed the lovely people at The Raw Chocolate Company and asked if they had any bars that don't contain algaroba and next thing I know three amazing sounding raw chocolate bars appear on my doorstep! Tonight I had a few squares of Lavish which is dark chocolate with orange. I like this. A lot. It could be dangerous. Oh and don't let me put you off the other flavours, plenty of people don't have the same 'issues' with mesquite as I do!





Far healthier than Terry's...

Dinner: Chicken chow mein (still to eat, waiting for my boyfriend coming home from some meeting about pool...)

Drinks: Coffee with coconut syrup, Teapigs, green tea mixed with fruit tea and water

Exercise: 20 min run at lunchtime - managed to keep running for 2 minutes instead of 1 minute today! And kept my recovery walks to 1 minute, was tough, but I feel like I can do better!

So far, so good! But my boyfriend has just arrived home with a tube of Smarties - they are for photographs but it's going to be hard not to eat them! Maybe I'll just have the orange ones ;)

Fudge Fudge Baby

Yum! I just made another batch of Fudge Babies, but this time I added some Artisana coconut butter - wow! These are amazing! I didn't make many, only 6, as I was scared they would be so good I would want to scoff the lot :D

I just used Chocolate Covered Katie's standard recipe but used a quarter of the ingredients:

30g Walnuts

60g Dates

2 tsps Cacao

1/4 tsp vanilla extract

20g coconut butter

Threw the lot in my food processor and blended



This coconut butter was a very good purchase!

Who Wants Freebies? Pack Tunch Giveaway/Review!

As I said the other day the lovely people at Pack Tunch sent me a box of freebies to try and to give to you for free! (thanks Beth :) )

The Pack Tunch bars are a great, healthy and natural snack made with fruits, nuts and cereals only! They come in 3 flavours - Apple & Cinnamon, Lemon & Lime and Pineapple  Coconut.



The bars are also gluten-free, dairy free, vegan and raw! I do love my raw snacks - they are excellent pre-workout for some slow release energy and fruits and nuts are great post-workout foods too. I have mostly been eating them post workout-out to avoid grabbing the first thing I see - like crisps or sports drinks!

All ingredients are natural, the apricots are organic, raisins and dates free from vegetable oil, the dried apple and pineapple have no added sugars and the cocout is sulphur free.



That's my cat on the left, he was very interested! Though I am sure he's much rather have a tin of tuna!

Lets talk numbers...

It varies a little for each flavour but each comes in at just over 400 calories, around 10g protein, 60g Carbs and 19g fat (all good fats remember!)

I managed to try each of the flavours during the week - Lemon & Lime is my favourite! All of the bars have the same texture, nice and chewy, kind of half way between a Nakd bar and a Larabar, both of which I love! It's kind of hard to describe but far nicer than most cereal bars available anyway! Though my boyfriend wasn's as much of a fan, after tearing the Apple & Cinnamon out of my hand, pausing so I could take a photo ;) he decided it was too weird for him, he doesn't like dates which is the first ingredient, he was just after the apple and cinnamon combo! Poor me had to eat the rest of the bar. It was lovely! Not enough cinnamon for me, but I do like a lot of cinnamon - the puffed rice is a nice little addition.





I know 400-odd calories may seem like a lot, but every one of those calories is good stuff! I have been eating the bars half at a time and find it's enough for a snack and the other half keeps well until the next day too.

I had the Pineapple & Coconut bar at work the other day (which means rubbishy iPhone photo), I was only going to have half... but it was too good and I couldn't put it down. I was pleased to taste a lot of coconut, I do love coconut these days! The pineapple flavour wasn't very strong which was a shame as I was hoping for something more pina colada-y :D





Lastly, I tried the Lemon & Lime today, I had half after my run and I've just finished the other half. This one is definitely my favourite! Reminded me of Opal Fruits (or Starbusrt, I just can't bring myself to call them that). Very Lemon & Limey!

5k

Yay! I completed 5k on the treadmill this morning! It's the second time I have managed the full distance so I'm pretty pleased with myself! I did it by running for 2 minutes at 6mph then walking for 1 minute at 4mph - I have never managed to run for as long so many times so I am defintely making progress! I did cheat a little and 3 of my runs were 1 minute 30 seconds at 6.5mph - I just couldn't help myself putting the speed up a little!

Yesterday was a good food day the evening, not so much! It wasn't outrageous or anything but I did have that whole bottle of preach bellini, 2 cookies, some (*cough*) crisps and.... oh that was it!

Breakfast: Oats with vanilla rice milk and maple spiced pecan butter - this is a Nigella Lawson Christmas recipe, you heat maple syrup in a pan, add cayenne pepper and when it starts to boil stir in some pecan nuts. Take off the heat and spread the nuts out over some foil and leave to cool. The are so tasty and ridiculously moreish! So I blended them up into nut butter instead and it's even more amazing!

Lunch: Sandwich with proper ham, lettuce, spring onion and Nando's Lime & Corriander marrinade and a Pineapple & Coconut Pack Tunch bar

Snack: Starbucks grande skinny latte with an extra espresso shot and some sugar free hazelnut syrup - I'm addicted! I then went home and ate 4 fudge babies, a spoonful of Dark Chocolate Dreams peanut butter and a spoonful of dark chocolate spread with coconut butter - I just could not stop myself, must learn self control! I blame being a woman (TOTM!)

Dinner: One of my all time favourites! Salmon on Thai Broth! I think I've posted the recipe before but here it is again:

  • 1 Pint Kallo Vegetable Stock

  • 2 Tsps Ground Ginger

  • 5 Medium Spring Onions

  • 1 Small Chilli Pepper

  • 175g Mange Tout

  • 10g Thai Spice Blend

  • 2 Portions/300g Salmon Fillet

  • 10g  Lemon Grass/Coconut/Ginger puree, Sharwood's


Make up the veg stock, add in all the spices, everything except the salmon, spring onion and mange tout.

Mix it all together and pour into a wok, add the veggies and bring to the boil

Add in the two salmon fillets and reduce the heat, simmer until salmon is cooked

Snack: cookies, crisps and peach bellini!

I'm not posting my calories for the day as I have estimated a lot of the snacking so it wont be accurate, but suffice to say it's waaaaaay over my maintenance calories!

Today, so far, looks like:

I've taken a tip from HEAB and been trying full fat proper dairy products to see if they agree with me more - kind of hard to tell though when I'm in a phase of drinking skinny latte's daily! But, I do love the taste of tea and coffee with a little fat milk in it, and it hardly makes a difference to calories anyway. Doubt I'd be able to take fat milk in cereal though, far too creamy...though I bet it's good for an indulgent bowl of porridge...

Also taking a tip from HEAB, I heated up some vanilla rice milk and added a peppermint tea bag - amazing! Tastes so naughty and indulgent, far better than an option mint hot chocolate anyway! Must try it with almond milk, cacao and maple syrup sometime!



Breakfast was a Green Monster before heading out to the gym for my run - 300ml vanilla rice milk, some spinach, a medium banana and 1/2tsp spirulina











After my run I inhaled half a Lemon & Lime Pack Tunch bar - yum!



And had a Maxitone chocolate Sculptress shake before hitting the shower



Now I'm chilling on the sofa watching Sex & the City with a cat curled up at my feet keeping me nice and warm! I'll be back soon for a delicious giveaway!
