



Serves 2:
Preheat the over to 175C
Very quickly and roughly chop the tomatoes, onion and garlic and put in a roasting dish
Pour over the oil, vinegar, herbs,s alt and pepper and give it a good mix
Roast in the over for 45-50 minutes
Leave too cool a litte the pour into a blender and blend until smooth
This recipe came from watching The Delicious Miss Dahl -it's not an exact copy of how she made hers but is based around what I could remember! It's really nice and thick and creamy - great comfort food!

ReplyDeleteRoasted veggies absolutely rock for soup! I only just made a roasted veggie soup for lunch today; tomatoes, courgette, red peppers all roasted and with celery (raw), garlic (raw), capers and chilli pepper (raw) whizzed in with some water, olive oil, salt, pepper and an organic veg. stock cube. It came out surprisingly creamy, probably due to the courgette I think.

ReplyDeleteI'll need to try experimenting with more roast veg soups - it never really occurred to me to make soup any other way than in a big pot!

ReplyDeletesounds yummy do you just have the soup on its own or can you have a 2 slices or rye bread with it?
ReplyDeleteI usually have it with something as it is very light on calories. I either have a nice hearty bread with lots of seeds or Ryvita or rye bread. Today I have hummus with raw mange tout to have on the side :)
