Good Day

Please let it last! I've been so well behaved with my food today and still have dinner and a snack to go so I should be able to stick to the plan and stay within calories for the rest of the evening! And my stats look good, plenty of fruit and veg, plenty of water, protein nice and high, good amount of healthy fats. I'm feeling really positive and motivated again today! I was quite fancying a run outside, but it's started snowing. Which is just ridiculous. Should it not be getting warmer by now?

I haven't been doing too well lately in terms of motivation and willpower so I'm really hoping this feeling will last! As usual I haven't been eating *that* badly, just not great - been giving in to temptation and craving crisps a lot. And exercise? Um, yeah...what's that? Though I did get up and go for a run on Saturday morning, I nearly gave up because it was so damn hot in the gym! The air-con is broken so it's like running in a sauna! I was only managing a few minutes running at a time but my walking rests were much shorter and I stuck it out for an hour and covered 7.4k, which is my longest yet so I am starting to feel a bit more hopeful for doing a 10k in a few months. Got another date with a friend for the gym tomorrow evening - planning on doing some weights! I'm a big scared though it's been ages since I lifted more than a chocolate bar.

Today I started off with a bowl of porridge made with coconut milk - I used this stuff from Kara, saw it in Tesco and couldn't resist! I might not be going to quit dairy but I do still love cows milk alternatives for porridge, cereal and smoothies. I also added some Artisana coconut butter as the milk doesn't have a very strong coconut taste, and of course some cinnamon! It was weird, not sure if it's because I've been eating too much junk lately (probably) but it was really lacking in sweetness, it definitely tasted more like savory oats. Nice but not what I was hoping for, maybe add a little stevia next time.

I did have a pear with me for a snack but it wasn't ripe enough. I think it's doing that thing of waiting until I look away and then it will suddenly ripen and the go rotten. I hate pears. They taste great but never seem to be edible when I want to eat them.

Lunch, lunch was goood! I had a two (whole) egg omelette with parma ham, goats cheese, spring onion and courgette. Yum! In my sad looking little microwave omelette maker - no picture as it looked like the dog had eaten his dinner and then thrown it up.

Snack was greek yogurt with 2 chopped kiwi's

When I came home instead of doing my usual thing of nomming everything in sight I made a cup of tea and that'll be me until I make dinner.

Today's food packed up for work, though I didn't take the whole carton of milk with me!

Last nights dinner - chicken breast cut in two, wrapped in parma ham, served with spaghetti with Philadelphia cream cheese, orgeano, basil and red onion

Another great use for the coconut milk...

    also "nomming everything in sight". That would be my evening eating strategy as well!

  2. I love that coconut milk I got some when I went to the vitality show yummy! I'm glad to hear your feeling good about your food you shouldn't beat yourself up about it though we all have bad days I know i do! x x x

  3. I can't believe it was snowing. People always says May is the best weather month is Scotland- I really hope June is better! You have had a good day of eats- well done :)

  4. I've been thinking about giving that coconut milk a try as I've also seen it in Tescos. Your omlette sounds really tasty even if it didn't look great! I'll have to keep my eyes open for a microwave omlette maker!

  5. I'd love to try coconut milk, but I'm worried about shelf life once the carton is open; I'm terrible for needing variety day-to-day, so if I have some one day, I might not want it again for another few days. Any ideas there?

    June HAS to be better! It just has to! I have my heating on tonight, and the fire, and I'm still cold!

    I think I had it open about 5 days and it was still fine so I think it would last OK. It's also not that strong a coconut taste so you could easily use other flavours for variety as it wont always taste of coconut - it's a good base for smoothies as well as porridge, and Baileys! And I used warmed with peppermint tea bag which was very nice

    I think most supermarkets have then in the homewares section - mine was from Sainsburys and was about £2 I think

    Thanks Tamzin! I'm just trying to keep the odd off day to being just the odd day here and there, I find it's so easy to let it slip for weeks!

    I know what you mean, I'm mostly likely to start eating too much when my food gets a bit same-y and boring. It's not uncommon for there to be between 3 and 5 types of milk in our fridge!
